Apple Cheese Quesadillas
A Different Twist on This Mexican Favorite
Apple Cheese Quesadillas are a nice change from the usual quesadillas recipes. The apple and cheese blend together wonderfully with the mustard and onion flavors.
We have prepared these for parties and sometimes just for a quick family meal. You can serve these with a traditional salsa and sour cream or you could try a mango or apple salsa.
Of course, you're not limited to just these ingredients. We have also added some leftover rotisserie chicken, mushrooms, black olives and roasted red peppers. You can add whatever you are in the mood for or whatever you happen to have on hand.
A pizza cutting wheel works well for slicing them into easy to eat triangles.
Quesadilla Recipe
Ingredients:
8 (8") flour tortillas
2 tablespoons butter or margarine
2 tablespoons Dijon mustard
2 chopped green onions
2 red apples, cored and sliced thin
2 cups Gouda Cheese shredded
Prep time: 15 min
Cook time: 10 min
Makes 4 Quesadillas
Preparation:
Spread approximately 1/2 tablespoon of mustard on one of the tortillas
Top with apple slices, green onion and 1/2 cup of shredded Gouda cheese.
Put a second tortilla on top.
Do the same with remaining ingredients, stacking the quesadillas on a plate.
Put some butter or margarine in a non–stick frying pan, let butter melt completely and spread it out evenly over the pan.
Put one of the assembled quesadillas in.
Cook for about 2–3 minutes, or until the bottom is turning brown. Flip carefully and cook on the other side until brown.
Remove from the pan and cut into quarters with a pizza cutting wheel.
