Asparagus Beef Appetizer

When we start looking at Christmas party appetizer recipes beef seems to be the meat of choice. Probably because everyone is tired of turkey by now.

 

 

The ingredient quantities are a guideline for the basic Asparagus Beef Appetizer.
You can add more roast beef than what is called for and you can substitute other ingredients for the asparagus, like cucumber, lettuce or you could use some roasted red bell peppers. You can find them at your grocery store. They usually come in a jar and can be found near the pickles.

Asparagus Beef Roll Up


Ingredients:

  • A bottle of creamy horseradish sauce
  • Black pepper
  • 4 (6 inch) flour tortillas
  • 4 thin slices cooked roast beef
  • 8 fresh asparagus spears, blanched and cooled (see below)

Preparation:

  1. Spread about 2 teaspoons of horseradish sauce on each tortilla
  2. Top with a slice of beef.
  3. Sprinkle some pepper on the beef
  4. Place one or two asparagus spears at one end
  5. Roll up tightly, starting at the end with the asparagus.
  6. Wrap in plastic wrap.
  7. Refrigerate for at least 2 hours.
  8. Cut into 1/2-in. slices.

 

How to Cook Asparagus

Breaking Off The Tough End

Depending on the size of the asparagus you have, There will be different ways to get rid of the tough bottom end before cooking.

Small spears just need to have 1/4 cut off the bottom.

The bottoms of large asparagus will need to be peeled with a vegetable peeler or snapped off.

To snap off the tough bottom, hold the asparagus with both hands in the middle and bend the bottom portion until it breaks off. The asparagus will break off at the point where the tender and tough part meet.



How to Blanch Asparagus

Blanching is usually the best way to cook asparagus. Blanching or steaming will keep them crisp. To blanch asparagus, bring water and some salt to boil in a large skillet or saucepan. Add the asparagus and simmer 2 to 3 minutes only depending on diameter of asparagus. Remove and rinse in cold water until asparagus has cooled down. You can also put them in a bowl of ice water to cool them down.
