Asparagus Beef Appetizer

When we start looking at Christmas party appetizer recipes beef seems to be the meat of choice. Probably because everyone is tired of turkey by now.
The ingredient quantities are a guideline for the basic Asparagus Beef Appetizer.
You can add more roast beef than what is called for and you can substitute other ingredients for the asparagus, like cucumber, lettuce or you could use some roasted red bell peppers. You can find them at your grocery store. They usually come in a jar and can be found near the pickles.
Asparagus Beef Roll Up
Ingredients:
- A bottle of creamy horseradish sauce
- Dash pepper
- 4 (6 inch) flour tortillas
- 4 thin slices cooked roast beef
- 8 fresh asparagus spears, cooked and drained

Preparation:
- Spread about 2 teaspoons of horseradish sauce on each tortilla
- Top with a slice of beef.
- Sprinkle some pepper on the beef
- Place two asparagus spears at one end
- Roll up tightly, starting at the end with the asparagus.
- Wrap in plastic wrap.
- Refrigerate for at least 2 hours.
- Cut into 1/2-in. slices.
