Authentic Hummus

The Authentic Hummus Recipe has its origins in the Middle East. Chickpeas and sesame, the crops from which hummus's main ingredients are taken, were known and cultivated in the ancient Mediterranean.

Hummus is made with chickpeas that have been pureed and tahini which is basically a sesame seed paste. This is mixed with lemon juice, salt, garlic and olive oil. Hummus is naturally low in fat.

As an appetizer, hummus is scooped with flatbread such as pita. Of course, you can dip just about anything into hummus. We usually serve it with a combination of crackers and raw veggies.

We have listed two garlic cloves in this recipe. Hummus isn't an exact science, so you can add as much garlic as you like.

 

Hummus Recipe


Hummus Ingredients:

  • 1-2 garlic cloves
  • 1/4 cup tahini
  • 1/8 tsp. salt
  • 2 (16 ounce) cans garbanzo beans (chick peas) drained.
  • Juice of 1 lemon
  • 1/3 cup water
  • Paprika (optional)

 

Preparation:

  1. Drain and rinse garbanzos in a colander. Don't use the juices from the can in this recipe. It will muddy the flavor.
  2. Put garlic, tahini and salt in a blender or food processor and pulse until ingredients are well mixed.
  3. Add garbanzo beans (one can at a time) and blend after each addition.
  4. Add lemon juice and blend.
  5. Add as much water as you need for the consistency you like. It should be similar to a bean dip in texture.
  6. Put in a bowl and sprinkle with Paprika
