Bacon Wrapped Shrimp

We love cooking with shrimp, it's one of our favorite ingredients and Bacon Wrapped Shrimp is our favorite way to eat them. Bacon seems to give a dignified – more upscale look and taste to shrimp.
The main thing to remember when making these, is that bacon takes longer to cook than shrimp. It's best to pre-cook the bacon strips in a microwave for a few minutes otherwise the shrimp will over cook and end up rubbery. Just keep in mind that you need the bacon to still be pliable so it can be wrapped around the shrimp.
The shrimp will first marinate in a lime and garlic mixture for 30 minutes before being wrapped. They can be grilled or baked in the oven. We are showing this recipe with 12 large shrimp being made. You can double or triple this recipe depending on how many you need to make.
Bacon Wrapped Shrimp Recipe
Ingredients:
- 12 large, raw, peeled and deveined shrimp (you can leave the tails on if you like)
- 2 Tablespoons olive oil
- Zest from 1 lime
- Juice from 1 lime
- 1/4 teaspoon cajun seasoning or your favorite seasoning
- 6 strips thin bacon, cut in half (12 pieces)
- Skewers (for grilling) or toothpicks (for baking)
Preparation:
- Mix in a small bowl the lime zest, lime juice, olive oil, and seasoning.
- Put the shrimp in the mixture making sure each piece is well coated.
- Let sit for 30 minutes.
- Pre-cook your bacon strips in the microwave for a few minutes at a time, checking between to make sure the bacon is still soft enough to wrap. All microwaves are different, so I can't give you exact cooking times.
- Cut the bacon strips in half with scissors and wrap the bacon around the shrimp working from head to tail, pull bacon around the shrimp. Then secure with toothpicks. Or slide them onto wooden skewers if grilling.
- If you are baking these then preheat oven to 425 degrees and arrange the shrimp on a slotted broiler pan.
- Bake shrimp 10 to 14 minutes turning them over once halfway through, until shrimp is pink.
- Remove toothpicks and serve.
- If grilling, thread the shrimp onto long wood skewers (make sure you soak them in water for 30 minutes before grilling).
Grill uncovered for 5-7 minutes on each side
