Baked Zucchini Strips

 


Baked ZucchiniBaked Zucchini Strips are easy to make and are a great low fat food. It also happens to be my favorite zucchini recipe.

The use of an egg substitute and by not frying them in oil greatly cuts down the amount of fat in this recipe.

Of course, you aren't limited to the way you cut the zucchini. Looking at the picture to the right you can see these were cut into coin shapes. I have found this to be the easiest way to cut them, since it is just a matter of slicing them across their natural shape. Cutting them into strips takes a bit longer. The smaller shape also helps when you are cooking zucchini.

 

 

Zucchini Strips Recipe

Ingredients:

  • 1/2 cup egg substitute
  • 1/3 cup seasoned bread crumbs
  • 1/4 cup Parmesan cheese
  • 4 small zucchini, sliced into round 1/4" coins.

 

Preparation:

  1. Preheat oven to 450 degrees F.
  2. Pour egg substitute into a shallow dish.
  3. Combine bread crumbs and cheese in another shallow dish.
  4. Dip zucchini coins into egg, then roll in bread crumb mixture to coat.
  5. Place on a baking dish that has been sprayed with nonstick cooking spray.
  6. Bake 18 to 25 minutes, or until golden brown and tender.
