The Perfect Size For Little Mouths


Cookie Sandwiches

Make a batch of these Cookie Sandwiches and watch them disappear. The flavor combination of cherry, cream cheese and the vanilla cookie create a delicious and easy cookie recipe.

They are great for bake sales at school or church and holiday parties. For our Halloween parties, we add red and yellow food coloring to the cream cheese to give them an orange color. For Valentines day, we of course use red food coloring. We usually make these when the school asks the parents to bring in a dessert for the different parties they have throughout the year. They turn out to be the perfect size for little mouths.

 

 

You can add all kinds of different ingredients to the filling.

  • Mini chocolate chips
  • Raisins
  • Dried Cranberries
  • Dried Cherries
  • Sprinkles
  • Dried Pineapple Pieces
  • Crushed Oreo cookies

 

 

Cookie Sandwich Recipe

 

Ingredients:

  • 1 package (8 ounces) reduced-fat cream cheese, softened
  • 1/4 cup cherry preserves
  • 1/4 cup powdered sugar, sifted
  • 1/4 teaspoon vanilla or almond extract
  • 2 tablespoons chopped dried cherries or cherry flavored craisins
  • 40 vanilla cookies

 

Preparation:

  1. Mash softened cream cheese in a bowl with fork.
  2. Mix in preserves, sugar, vanilla or almond extract, and dried fruit into cream cheese
  3. Mix until well blended; chill 30 minutes
  4. Spoon about 2 teaspoons cream cheese mixture onto flat side of vanilla cookie
  5. Top with another cookie
  6. Repeat until all cookies are filled

 

 

Cookie Sandwich Tip:

Try strawberry, raspberry or other preserve flavors to suit your tastes.
