Crunchy Cookie Balls
Crunchy Cookie Balls are a great treat for the kids and is another great cookie to put in your children's lunch box or have as an after school snack. We always have some of these on hand for family gatherings.
This Cookie Ball has a surprise ingredient; crushed chocolate chip cookies. The crushed cookies adds a nice crispy texture. You don't have to limit this recipe to chocolate chip cookies, go ahead and use your favorite snack cookies.
Crunchy Cookie Ball Recipe
Ingredients:
- 2 – cups peanut butter
- 1 – cup sifted powdered sugar
- 36 – Store bought Chocolate Chip Cookies, finely crushed
about 3 cups

Preparation:
- Mix peanut butter and sugar in medium bowl. Add 1-1/2 cups of the crushed cookies; stir until well blended.
- Shape peanut butter mixture into balls, using 1 heaping teaspoonful for each ball.
- Roll in the remaining 1-1/2 cups crushed cookies until balls are evenly coated; cover.
- Refrigerate at least 1 hour.
- Store leftover balls in refrigerator.
Makes about 60 balls. You can cut recipe in half if needed.

Try rolling the Cookie Balls a second time in some decorative sprinkles to give them some color.
