Easy Chicken SaladThis Easy Chicken Salad Recipe is a great way to serve up a quick cool summer appetizer for your guests. Serve it up with your favorite crackers or pita chips and watch it disappear.

Sometimes we use a basic chicken salad recipe which just uses celery but most of the time we add all kinds of yummy ingredients to it. My favorite is sliced grapes and pecans. Kind of like a Waldorf salad.

The kids prefer raisins in theirs. I once made the mistake of asking our children what they wanted in their chicken salad. The oldest one yelled out " M&Ms". Our youngest said " Gummi Worms!" I told them "Nice Try!" We all broke out in laughter." So raisins it is!" I shouted.

 

 

Easy Chicken Salad

Ingredients:

  • 1 or 2 large cooked boneless, skinless chicken breast halfs cut into chunks (the amount depends on how much you want to make)

    1/2 celery stalk thinly sliced

  • Enough Mayonnaise to make
    slightly creamy
  • Optional ingredients, such as pecans, sliced grapes, raisins etc...

    Salt and Pepper to taste

 

 

Preparation:

Mix all ingredients in a bowl and serve.
