Edam Cheese
It's one of Holland's best known cheeses. Edam and Gouda resemble each other in flavor. However, they differ in a few ways. Edam has about 10 percent lower fat content. It was first made by skimming the fat from milk in the evening and use it to make butter. The remaining milk was mixed with the next days' milk to make cheese with a lower fat content and sharper flavor. The shape is round like a cannon ball as compared to Gouda's wheel shape.
Edam actually refers to a style of cheese rather than the town in which it originated. Like many cheeses consumed in the U.S., it's usually eaten young, when its texture is elastic and supple, and the flavor is smooth, mild and nutty. Aged Edam has a more robust flavor and is preferred by most cheese aficionados.
These days, it's produced all over the Netherlands, the origins go back 600 years to the town of Edam in North Holland, well known as a important center of Dutch cheese exports. The Dutch are 6th in the world when it comes to cheese production, and 60% of it is Gouda. They are the world's largest exporter of cheese!
