Feta Cheese Puffs are a delicious appetizer for the holidays. Below is the basic recipe to follow but we like to add extra ingredients to spice it up a bit. You can add just about anything you like to this recipe as long as it isn't too watery. We add crumbled breakfast sausage and some chopped black olives to the cheese mixture. Feta cheese also comes with different flavors added. Last week we used a sun-dried tomato Feta in this recipe and it turned out great. You can usually buy Feta Cheese at your local supermarket. If you don't care for Feta Cheese you can use Goat Cheese or Cream Cheese.
Also, if you don't feel like messing around with cutting and folding dough, then you should try using phylo dough cups that you can buy pre-made in the freezer section. They really cut down on the time it took to make this Feta cheese appetizer. All you have to do is fill the cups with your cheese mixture and bake them in the oven for about 8 minutes or until the cheese is melted and the phylo cups are crisp. The picture to the right shows the recipe using the phylo cups with some roasted red peppers and basil as garnish.
Cheese Puffs Recipe
Ingredients:
- 8 ounces crumbled feta cheese
- 3 Tbls finely chopped green onions
- 1 egg, beaten
- 1 (17.5 ounce) package frozen puff pastry, thawed
- 1 egg yolk, beaten with 1 teaspoon water

Preparation:
- Preheat oven to 375 degrees F (190 degrees C).
- In a small bowl, blend green onions, feta cheese and beaten egg.
- Cut pastry into 3 inch squares. Place a large spoonful of feta mixture in the center of each square.
- Moisten edges with water, and fold pastry over filling to form a triangle.
- Press edges together firmly with a fork to seal.
- Lightly brush pastries with the egg yolk and water mixture.
- Bake for 20 minutes in the preheated oven, or until golden brown.
- Serve warm or at room temperature.
