We used to make the usual French Onion Dip Recipe with onion soup mix and sour cream but a few years ago my wife and I went to a Christmas party that the neighbors were having. About ten minutes into the party, my wife comes up to me and puts a cracker in my mouth with the best onion dip I have ever tasted on it. She looks at me and says "pretty good huh!". All I could say in between chewing was "please get the recipe!"
So we asked our neighbor for the recipe and we made it the next day for one of our parties. Everyone liked it and now it is on our party menu from now on.
Making this from scratch does take more time and we still make the soup mix version for quick party food but we always like to do something extra special for the holidays. Besides, this version tastes a lot better.
French Onion Dip
Ingredients:
1 tablespoons extra-virgin olive oil
1 tablespoon butter
2 medium onions, quartered lengthwise then sliced very thinly
2 cloves garlic, finely chopped
1 cube beef bouillon
1/2 cup water
Black pepper
1 teaspoon ground thyme
2 teaspoons Worcestershire sauce
2 cups sour cream
8 ounces cream cheese, softened in microwave for 20 seconds on high
Pinch salt
2 tablespoons chopped chives

Preparation:
Place a medium skillet over medium to medium high heat and add the extra-virgin olive oil and the butter.
Melt butter into oil then add onions and garlic cook 10 minutes, stirring occasionally.
Add bouillon cube to the pan with 1/2 cup water and cook until it melts and coats onions, stirring frequently for 3 minutes. Season the onions with pepper, thyme and Worcestershire sauce.
Remove from heat and transfer to a plate to cool.
In a medium bowl, mix together the sour cream and softened creamed cheese.
Stir in the onion mixture until completely combined.
Add salt to taste.
Serve at room temperature or chill. (chilling overnight give best flavor)
Garnish with chives just before serving.
