Le Chevrot is a small funny looking goat cheese from France's Loire Valley with a wavy pearl colored rind. It's produced by a co-op in the village of Celles-sur-Belle. This region is famous for its goat’s milk cheese that come in a wide variety of flavors and shapes.
I love a soft cheese that oozes out of the rind and is easily spread on bread or crackers. I was expecting a strong goat milk flavor when I first tasted it but it was very mild. You can eat the rind that covers the soft cheese inside. The size and shape of this cheese is referred to as a 'button' and comes in different sizes.
When you eat the rind with the cheese, the flavor is stronger. The center is moist and firm like putty. When this cheese is young it has a gentle taste to it, like herbs or toasted nuts with a moist texture.
It's aged for two weeks. As it matures, the inside becomes soft and it takes on a full bodied flavor with hints of caramel. It's good to eat at many any age. It matures well and will prove to be popular with goat cheese lovers everywhere. If left to age for about three weeks, it becomes drier and it starts to darken. At this point it can be crumbled or grated.
Le Chevrot goes well with bread and wine, especially champagne.
