Lemon Balls

These wonderfully delicious Lemon Dessert Balls are easy to make and even easier to make disappear. The flavor combination of tart lemon, walnuts and sweet dates makes this recipe a winner.

It's fun to listen to our guests try and guess what the ingredients are.

For a real flavor explosion, put a plate of these next to a bowl of chocolate fondue.

 

This recipe calls for rolling them in unsweetened shredded coconut. However, you can use all kinds of toppings that go great with the lemon flavor. You could roll them in some mini chocolate chips, crushed cookies like Oreos or Graham Crackers. Ground nuts are a good choice also. Crushed roasted peanuts or pecans would make a great topping. For a colorful topping, you could try some colored sprinkles, or mini M&M's. Our youngest son wanted his rolled in Skittles. I told him I would have to get back to him on that.

I tried using brown sugar once but it just melted all over the place. Brown sugar absorbs moisture. The kinds of toppings you can use are limitless. Just use your imagination.

 

 

Lemon Dessert Recipe


Ingredients:

  • 1 cup pitted dates, chopped
  • Lemon Juice - 1/4 cup
  • 2 tsp. lemon zest
  • 1 cup raw walnuts
  • 1 cup sesame seeds
  • 1/2 cup unsweetened coconut flakes

 

Preparation:

  1. Place in a food processor the walnuts, dates, lemon juice, lemon zest, and sesame seeds.
  2. Pulse until completely mixed. The mixture will be a bit sticky.
  3. Dampen your hands and roll spoonfuls of the mixture into bite size balls.
  4. Roll the balls in shredded coconut and store in the refrigerator until ready to serve.
