Little BLTsThese Little BLTs may take a bit more work than most of our recipes but we put this tomato appetizer here because it is worth the extra effort. Little BLTs look great on your table and they will disappear fast.

You could also do the same with cucumbers. Just take off the outer skin with a peeler, cut into one inch slices and scoop out some of the middle with a melon scooper.

If you plan on making a lot of these then using a decorating bag to fill the celery will make things go along faster. If you don't have a decorating or pastry bag then you can make one very easily by taking a plastic sealable bag, such as a ziploc, and put your filling mixture into it. Then, when you are ready to fill the celery sticks, cut one of the bottom corners off of the bag with some scissors. Don't make the cut too big, you want to make a hole just large enough to squeeze out the right amount into your tomato. Start by cutting off about a 1/2 inch corner and adjust from there.

 

Little BLT Recipe

Ingredients:

  • 1 – Container of cherry tomatoes about 24
  • ½ – cup mayonnaise or Miracle Whip
  • ¼ – cup green onions, chopped
  • 2 – tablespoons chopped fresh parsley
  • 1 – pound bacon, cooked and crumbled
  • Small can sliced black olives (optional)

 

 

Preparation:

  1. Cook Bacon and crumble after it has cooled. (See bacon cooking tip below.)
  2. In a bowl, stir together the mayonnaise, bacon, green onions, and parsley until well blended.
  3. Set aside.
  4. Cut a small slice from the top of each tomato.
  5. Using a melon baller or small spoon, scoop out the inside of each tomato and discard.
  6. Fill each tomato with the bacon mixture, and refrigerate for 1 hour.
  7. Before serving, you can top them with some sliced black olives, parsely or some more chopped bacon.

 

 

Bacon Cooking Tip:

Cooking bacon is easier and faster in the microwave. We use a bacon cooking tray made especially for the microwave. Cooking time for the bacon will depend on your microwave and how many strips of bacon you cook at one time. Experiment with 1 minute per slice and check to see how crispy they are.
Also: Put a paper towel over the bacon when cooking it, this will help absorb some of the grease and stop it from spattering all over the microwave. After cooking 3 or 4 trays, check the grease level in the cooking tray and pour into an empty jar or can with a tight lid.
