This Low Fat Banana Bread is a great finger food dessert to serve with coffee after the meal. One of our guests came into the kitchen while we had a loaf cooking and said it smelled like we were making doughnuts.
This recipe is very easy to make. The bread turns out very moist and delicious. The great thing about this recipe is that you can customize it with your own favorite additions. We usually add crushed pecans and raisins. A friend of ours put in a cup of chocolate chips. It tasted great but defeated the Low Fattiness (is that a word?) of the recipe.
Banana Bread Recipe
Ingredients:
- 4 very ripe bananas
- 1 1/2 cups all-purpose flour
- 3/4 cup white sugar
- 2 tablespoons butter, softened
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
1/2 teaspoon baking powder
- 1 egg
- 2 tablespoons applesauce

Preparation:
- Mash bananas in a bowl.
- Add all other ingredients and mix well.
- Pour into 2 greased loaf pans or you can make one very large loaf in one pan.
- Bake at 350 degrees for 50 to 60 minutes, or until toothpick inserted into center of cake comes out clean.
