This Low Fat Banana Bread is a great finger food dessert to serve with coffee after the meal. One of our guests came into the kitchen while we had a loaf cooking and said it smelled like we were making doughnuts.
This recipe is very easy to make. The bread turns out very moist and delicious.
The great thing about making this yourself is that you can customize it with your own favorite additions. We usually add crushed pecans and raisins. A friend of ours put in a cup of chocolate chips. It tasted great but defeated the Low Fattiness (is that a word?) of the recipe.
Banana Bread Recipe
Ingredients:
- 4 ripe bananas
- 1 1/2 cups all-purpose flour
- 3/4 cup white sugar
- 2 Tbls butter, softened
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1 egg
- 2 tsp applesauce

Preparation:
- Preheat oven to 350 degrees
- Using a fork, mash bananas in a bowl.
- Add all other ingredients and mix well.
- Pour mixture into 2 greased bread loaf pans.
- Bake for 50 to 60 minutes
- You will know it's ready when a toothpick inserted into center of the bread comes out clean.
