This Low Fat Quiche Recipe uses egg substitute and a low fat cheese. You can vary the ingredients to your own taste. We usually add mushrooms instead of meat to cut the fat levels even further.
We haven't found a great taste difference between this recipe and one that uses real eggs and real cheddar cheese. We like to serve these at parties and family get togethers. By using mini muffin pans they turn out to be just the right size for serving as appetizers. Of course, they make a great breakfast food also.
If you don't have mini muffin pans you can make this recipe in a 9 inch pan and cut them into bite sized squares.
Low Fat Quiche
Ingredients:
- 1 cup egg substitute (Egg Beaters)
- 1/2 cup biscuit mix
- 1/3 cup melted butter
- 1 1/2 cup skim milk
- Pepper to taste
- 1 tbsp. dehydrated onion flakes
- 4 oz. shredded, low fat yellow cheese
- 1/2 cup mushrooms

Preparation:
- Place all ingredients except cheese and mushrooms in blender.
- Mix for a few seconds to blend well.
- Pour into a mini muffin pans, greased with non-stick spray.
- Sprinkle cheese and mushrooms over top and push gently below surface.
- Bake at 350 degrees for 30 - 40 minutes.
- Allow to set 10 minutes before removing from the muffin trays.
