Low Fat Quiche Recipe

 

low fat quicheThis Low Fat Quiche Recipe uses egg substitute and a low fat cheese. You can vary the ingredients to your own taste. Sometimes we add choppped mushrooms instead of meat to make a vegetarian version.

We haven't found a great taste difference between this recipe and one that uses real eggs and real cheddar cheese. We like to serve these at parties and family get togethers.

By using mini muffin pans they turn out to be just the right size for serving as appetizers. Of course, these low fat quiches make a great breakfast or lunch food also. I make these Christmas morning for everyone as a special treat. Some have ham. Some have sausage and a few have bacon.

If you don't have mini muffin pans you can make this recipe in a 9 inch pan and cut them into bite sized squares.

 

Low Fat Quiche


Ingredients:

  • 1 cup Egg Beaters
  • 1/3 cup butter, melted
  • 1/2 cup biscuit mix
  • 1 Tbls onion flakes
  • 1 1/2 cup skim milk
  • Pepper to taste
  • 1/2 cup chopped ham
  • 4 ounces low fat yellow cheese, shredded

 

Preparation:

  1. Preheat oven to 350 degrees
  2. Place all the ingredients except ham and cheese in blender.
  3. Blend together well.
  4. Grease Mini Muffin pans with cooking spray
  5. Pour mixture into mini muffin pans
  6. Sprinkle ham and cheese over top of each one, pushig gently below surface.
  7. Bake for 30 - 40 minutes.
  8. Wait 5 minutes before removing from the muffin trays.
