Light up the Tiki torches and put out the lawn chairs, it's time to make some Margarita Shrimp on the barbeque.
This recipe is especially good for outdoor grilling. They marinate in lime, garlic and cilantro for up to 8 hours and then you grill or broil them.
We love to serve seafood to our guests. It's always a special treat that everyone enjoys. We prefer to cook these on the grill but they do just as well broiled in the oven. We have provided both cooking methods below.
Margarita Shrimp Recipe
Ingredients:
1/4 cup finely chopped green onions
1/4 cup oil
1/4 cup tequila
1 teaspoon grated lime peel
1 clove garlic minced
2 tablespoons fresh lime juice
2 tablespoons honey
2 tablespoons chopped fresh cilantro
1/2 teaspoon salt
1 lb. (about 30) large shrimp, shelled, tails left on and deveined

Preparation:
In medium bowl or ziploc bag, combine all ingredients except shrimp; mix well.
Add shrimp
Cover; refrigerate at least 4 hours or up to 8 hours to marinate.
Grill Method:
Heat up grill
Put shrimp on skewers
Cook until just pink turning once
Broiler Method:
Spray broiler pan with nonstick cooking spray.
Drain shrimp, discarding marinade. Place shrimp on sprayed broiler pan. Broil 4 to 5 inches from heat for 5 to 7 minutes or until shrimp turn pink, turning once.
