Marinated Mushrooms

 

Marinated Mushrooms Marinated Mushrooms are so easy to make and are just as easy to eat. This mushroom appetizer is cooked and marinated in a vinegar and oil mixture that is seasoned with mustard and parsley.

You can vary the ingredients to suit your taste. If you are a garlic lover like me then add a clove of garlic to the marinade. You can also add some Tarragon or Basil. For those of you who like a kick to their fungus, go ahead and add a few pinches of red pepper flakes.

This recipe can be made ahead of time. I make ours at least a week before the party to give the mushrooms extra marinating time.

 

Marinated Mushroom Recipe


Ingredients:

  • 1 lb fresh mushrooms or canned whole mushrooms, drained
  • 1/3 cup red wine vinegar
  • 1/3 cup vegetable or olive oil
  • 1 medium onion, sliced thin
  • 1 tsp. salt
  • 2 tsp. dried parsley flakes
  • 1 tsp. dry mustard
  • 1 T. brown sugar

 

Preparation:

  1. Clean mushrooms, trimming the end of each stem. Leave the mushrooms whole.
  2. In a saucepan, mix the remaining ingredients and bring to a boil.
  3. Add mushrooms and simmer 5-6 minutes or until the mushrooms appear darker in color.
  4. Remove and let cool. Then chill in a covered bowl, stirring occasionally.
  5. Drain and serve.

 


 

 Thanksgiving dinners take eighteen hours to prepare. They are consumed in twelve minutes. Half-times take twelve minutes. This is not coincidence.
