Our kids love peanut brittle. We usually make Microwave Peanut Brittle for the holidays. It's a great recipe for some quick Christmas party food.
After making homemade peanut brittle this way for the first time we were convinced that this was the only way to make it. It cooks up very fast and can be stored in plastic containers until you need it.
We ran out during our Christmas party last year. So I went into the kitchen and had some more ready in 45 minutes.
We like to make little take-away gifts for our guests. I use some small gift bags with decorative paper put inside. We fill them with all kinds of homemade goodies like peanut brittle, cookies, spiced nuts, and some pumpkin fudge. Our guests really appreciate the extra effort we put into them.
Microwave Peanut Brittle Recipe
Ingredients:
- 1 1/2 cups peanuts, shelled and dry roasted
- 1/2 cup corn syrup (light)
- 1 cup sugar (white)
- 1 pinch salt
- 1 tsp vanilla extract
- 1 Tbls butter or Margarine
- 1 tsp baking soda
Preparation:
- Spray baking sheet with cooking spray
- In a heat proof glass bowl or large glass measuring cup, combine corn syrup, peanuts, sugar and salt.
- Cook at high setting in microwave for 5 to 7 minutes. Caution: The mixture get very hot and bubbly.
- Carefully remove from microwave and stir in butter and vanilla; cook in microwave 2 minutes longer.
- Remove from microwave and quickly stir in baking soda until it gets foamy
- Pour the hot mixture onto the baking sheet you sprayed earlier.
- Let cool until hard
- Break into pieces, and store in an airtight container.
