Mini Corn Dogs
Mini Corn Dogs are a great lunch or snack for kids, especially for those younger ones who can’t eat a whole corn dog by themselves. Another great feature is that they are baked in the oven and not fried. These are also easier to prepare than traditional corn dog recipes. Try Them As Appetizers Serve these at your next party or get-together by using mini muffin pans and cutting the hot dogs into smaller pieces to fit. You could also add pieces of cooked breakfast sausage instead of the hot dogs and serve them for breakfast or brunch. Those are the two different ways that we have prepared them but you can probably get creative and put all kinds of different things in there. Hmmm… I’ll bet those little cocktail wieners would be good to try.
Mini Corn Dog Recipe
Ingredients: - 2 (8.5 ounce) packages corn bread mix
- 2 tablespoons brown sugar
- 2 eggs
- 1 1/2 cups milk
- 9 hot dogs, cut in ¼ inch slices.
- 1 cup grated Cheddar cheese
Preparation:- Preheat oven to 400˚ F.
- Lightly grease muffin tins.
- In a large bowl, stir together cornbread mix and brown sugar.
- In a small bowl, whisk together eggs and milk, and then stir into dry mixture until moistened.
- Mix in cheese.
- Spoon mixture into muffin tins until 2/3 full.
- Add some hot dog pieces into each muffin. (Use your judgement on how many to add)
- Bake in a preheated oven 14 to 18 minutes, or until golden brown.
