Mini Quiche

This is not your average quiche dish. This is an easy quiche recipe that makes a Mini Quiche Pie that is just the right size for finger food. Wow! Can I use the word quiche in a sentence more often? Anyway, this recipe is great for parties or for a family breakfast.
I took these to church for a morning breakfast meeting and they were gone in 10 minutes. They were a big hit compared to the boxes of doughnuts and pre-packaged baked goods everyone else brought.
It just goes to show that going that extra mile makes a difference. Since that day more home made goodies were showing up to the meetings. I think I have started a trend at our church and a pretty good one at that.
Go ahead and experiment with the ingredients if you want to. You could add some crumbled sausage, diced ham or you could forget the meat and add some chopped veggies instead.
Mini Quiche Recipe
Ingredients:
- 2 – cups shredded American cheese
- 6 – slices bacon, crumbled
- 3 – eggs
- 1 ½ – tablespoons chopped fresh parsley
- 3/4 – cup baking mix
- 1 – onion, chopped
Preparation:
- Preheat the oven to 350˚F
- Spray 2 mini muffin pans with cooking spray.
- Cook Bacon and crumble after it has cooled.
- In a medium size bowl, add the eggs and beat them.
- Mix in the baking mix, crumbled bacon, shredded cheese, parsley and chopped onion.
- Spoon mixture into sprayed muffin cups.
- Bake until the tops are light brown ( 10 to 15 minutes)
- Allow to cool in the pan for a few minutes, then using a small knife, run it around the edges and gently pry them out of the muffin pan.
