1 – pound mushrooms
4 – Slices of Bacon cooked and crumbled
1/2 cup – onion, minced
2 Tbls – minced green bell pepper
1 tsp – Salt
1/8 tsp – Pepper
1/4 cup – Hot water
3 oz. – softened cream cheese
1/2 cup – plain bread crumbs
Preparation:
Rinse mushrooms, remove stems and chop them
Set mushroom caps aside for now.
Cook bacon in a pan or use the microwave to cook them
Cook chopped mushroom stems, minced onions, and minced green peppers in a pan with some butter until tender; drain out liquid.
Season with salt and pepper.
Blend the softened cream cheese, vegetables and bacon in a bowl.
Press mixture into mushroom caps forming a mound on top. (I use a melon baller for this)
Put the bread crumbs in a small bowl
Carefully turn stuffed mushroom caps upside down and dip into the bread crumbs to coat the tops. Be careful the filling doesn't fall out.
Place in a 9 x 13 baking dish.
Add 1/4 cup of hot water to baking dish and bake, uncovered, 20 - 25 minutes at 325 F.
