Olive Garden Stuffed Mushrooms AppetizerThis recipe for Olive Garden Stuffed Mushrooms is pretty close to what you get at the restaurant. We served these at a dinner party last year and one of our guests said that they had tried these somewhere else but couldn't remember where. I said "Was it Olive Garden?" She said " Yes! That's it"

The combined flavors of oregano, chopped clams, Italian cheese, green onions and butter come together to make a delicious finger food to serve your guests.

To get that perfect rounded top, we use a small scoop used for making cookies. We use a regular spoon first to get the filling inside the cavity of the mushroom and then top it off with a scoop.

 

Olive Garden Stuffed Mushrooms

Ingredients:

  • 24 fresh mushroom caps
  • 1/2 tsp minced garlic
  • 2 tsp oregano (dried)
  • 2 - 6-oz. cans minced or chopped clams, drained, save the juice
  • 1 cup Italian-style bread crumbs
  • 1/4 cup green onions, chopped
  • 2 eggs, beaten
  • 6 Tbls melted butter, divided
  • 1 1/4 cups grated Parmesan cheese (Divide into two portions)
  • 1/4 cup melted butter for drizzling on top of mushrooms

 


Preparation:

  1. Heat oven to 350 degrees.
  2. Remove stems from mushrooms and rinse
  3. Combine the green onion, garlic, 2 Tbls of the butter, oregano and clams in a medium bowl.
  4. Add bread crumbs, eggs, 1/2 cup of the reserved clam juice and 1 cup of the grated cheese, mix together.
  5. Fill mushroom caps with the mixture, forming a small mound (We use a melon baller for this)
  6. Butter the bottom of a baking dish and add the stuffed mushrooms
  7. Pour the 1/4 cup of melted butter over the top of the stuffed mushrooms.
  8. Cover baking dish with foil and bake for 35-40 minutes.
  9. Take off foil and sprinkle on the remaining 1/4 cup of cheese.
  10. Bake uncovered for 5 more minutes.
