Moist and Delicious Pumpkin Bread For the Holidays

 

Pumpkin BreadOur guests love to have a slice of Pumpkin Bread with their coffee after a long night of "Trick or Treat" with the kids. If you don't like walnuts you can leave them out. You can also add raisins, dates, or pecans. My kids always want me to add chocolate chips.

In my opinion, one of the best ways to eat this is to put a slice in the toaster oven and toast it until the edges start to get a little brown. Then spread some cream cheese on and eat it while still warm, YUM! I eat this for breakfast each morning until I run out of pumpkin bread.

Another great way to eat this pumpkin bread is to spread some pumpkin dip on it for an intense pumpkin flavor. This dip recipe is mostly for cookies but it goes great on pumpkin bread also.

 

Pumpkin Bread Recipe

Ingredients:

  • 1 (15 oz.) can pumpkin puree
  • 1 cup vegetable oil
  • 3 cups sugar (white)
  • 4 eggs
  • 3 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 1/2 tsp salt
  • 2 tsp ground cinnamon
  • 1 1/2 tsp ground nutmeg
  • 1/2 cup chopped walnuts
  • 1 1/2 tsp ground allspice

Preparation:

  1. Combine pumpkin, eggs and oil.
  2. Mix together dry ingredients.
  3. Combine the wet and dry mixtures, mix thoroughly.
  4. Spray two 9 x 5 x 3 inch loaf pans with cooking spray
  5. Bake at 300 F (150 degrees C) for 1 hour.
  6. If you have dark colored pans, then reduce the temperature to 275 F.
  7. Stick a toothpick in the middle of each loaf. If it comes out dry then they are ready

 


Avoid fruits and nuts. You are what you eat.
