Pumpkin Bread
Our guests love to have a slice of Pumpkin Bread with their coffee after a long night of "Trick or Treat" with the kids. If you don't like walnuts you can leave them out. You can also add raisins or dates.
In my opinion, one of the best ways to eat this is to put a slice in the toaster oven and toast it until the edges start to get a little brown. Then spread some cream cheese on and eat it while still warm, YUM! I eat this for breakfast each morning until I run out of pumpkin bread.
Pumpkin Bread Recipe
Ingredients:
- 1 (15 ounce) can pumpkin puree
- 1 cup vegetable oil
- 4 eggs
- 3 1/2 cups all-purpose flour
- 3 cups white sugar
- 1 1/2 teaspoons baking soda
- 1 1/2 teaspoons salt
- 1 1/2 teaspoons ground allspice
- 1 1/2 teaspoons ground nutmeg
- 2 teaspoons ground cinnamon
- 1/2 cup chopped walnuts
- 1 teaspoon baking powder

Preparation:
- Combine pumpkin, oil and eggs.
- Sift together dry ingredients.
- Combine the two mixtures, blending thoroughly.
- Pour into 2 greased 9 x 5 x 3 inch loaf pans and bake at 300 F (150 degrees C) for 1 hour.
- If you have dark colored pans, then reduce the temperature to 275 F.
