I was looking for something else to do with some left over canned pumpkin I was keeping in the refrigerator, when a friend of mine gave me this Pumpkin Brownies recipe.
Two of my wife's favorite flavors are pumpkin and chocolate. So I figured this would be a really good recipe to surprise her with. They turned out great!
Fortunately, there were some left for her to try by the time she came home from work. Between me and the kids, we finished off most of them. I managed to save two for her.
We will definitely be making these for our Halloween party next week. I just hope I can resist the urge to eat them before the party.
Halloween Brownie Recipe
Ingredients:
Cooking spray
1 cup all-purpose flour
1/3 cup brown sugar
1/2 cup canned Pumpkin
1 large egg
Egg Whites of 2 large eggs
1 tsp baking powder
2 Tbls vegetable oil
1/2 tsp ground cinnamon
1/4 tsp salt
1 tsp cocoa powder
1/2 tsp ground allspice
1/3 cup mini chocolate chips
1/4 tsp ground nutmeg
Preparation:
Preheat oven to 350° F.
Spray baking dish (8 or 9-inch-square) with cooking spray.
Mix pumpkin, brown sugar, egg, egg whites and oil in large bowl.
Beat with an electric mixer on medium speed until mixed well
Add flour, cinnamon, nutmeg, baking powder, allspice, cocoa and salt
Mix on low speed until batter is becomes smooth.
Stir in chocolate chips.
Spread into baking dish sprayed with cooking spray.
Bake for 25 to 30 minutes or until toothpick inserted near center comes out clean.
