Roasted Red Pepper Hummus

Roasted Red Pepper Hummus is a delicious and healthy dip. The addition of roasted red peppers adds a new dimension to the traditional hummus recipe.

Hummus is a creamy puree of chickpeas and tahini (sesame seed paste) seasoned with lemon juice and garlic. If you can't find Tahini, then you can leave it out of the recipe.

As you are mixing the ingredients in the food processor, you will need to determine if the consistency is right. Your hummus should be smooth and creamy. If it is too stiff, then add water, a little at a time, and keep pulsing the food processor until the texture looks right.

We have listed two garlic cloves in this recipe. Hummus isn't an exact science, so you can add as much garlic as you like. If you like your Hummus spicy, then add a dash or two of Cayenne pepper or your favorite hot sauce to taste.

 

Roasted Red Pepper Hummus

Hummus Ingredients:

  • 1 (15-ounce) can chickpeas, rinsed and drained
  • 1/2 cup drained roasted red peppers,
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons tahini (sesame paste)
  • 2 garlic cloves, chopped
  • 1/2 teaspoon salt
  • Ground Paprika

 

Preparation:

  1. Drain and rinse garbanzos. Don't use the juices from the can in this recipe. It will muddy the flavor.
  2. Put garlic, tahini, red peppers and salt in a blender or food processor and pulse until ingredients are well mixed.
  3. Add garbanzo beans and blend.
  4. Add lemon juice and blend.
  5. Add as much water as you need for the consistency you like. It should be similar to a bean dip in texture.
  6. Put in a bowl and sprinkle with Paprika
