Roasted Red Pepper Hummus is a delicious and healthy dip. The addition of roasted red peppers adds a new dimension to the traditional hummus recipe. Hummus is made with chickpeas that have been pureed and tahini which is basically a sesame seed paste. This is mixed with lemon juice, salt, garlic and olive oil. Hummus is naturally low in fat. As you are mixing the ingredients in the food processor, you will need to determine if the consistency is right. Your hummus should be smooth and creamy. If it is too stiff, then add water, a little at a time, and keep pulsing the food processor until the texture looks right. We have listed two garlic cloves in this recipe. Hummus isn't an exact science, so you can add as much garlic as you like. If you like your Hummus spicy, then add a dash or two of Cayenne pepper or your favorite hot sauce to taste.
