Spinach Dip Recipe

(with bacon and blue cheese)

Spinach Dip

This is the second Spinach Dip Recipe on our site. In this version, we have added bacon and blue cheese for a more intense flavor combination.

After the spinach has been defrosted in the microwave, you will need to squeeze out the excess moisture. You can do this easily by placing the spinach in a colander and pressing down on it with a fork until most of the water is gone.

Spinach Dip Recipe

Ingredients:

  • 3 slices bacon , cooked and crumbled into small pieces
  • 10 ounces frozen chopped spinach
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 2 tablespoons thin-sliced scallions , white parts only
  • 1/2 cup packed flat-leaf parsley leaves
  • 1 small clove garlic , minced or pressed through garlic press
  • 1/4 teaspoon ground black pepper
  • 1 1/2 ounces blue cheese , crumbled (about 1/3 cup)

Preparation:

  1. Fry bacon in small skillet over medium-high heat, or cook in a microwave until crisp and browned.
  2. Thaw spinach in microwave for 3 minutes at 40 percent power.
  3. Squeeze defrosted spinach of excess water.
  4. In food processor, process spinach, sour cream, mayonnaise, scallions, parsley, garlic, pepper, and crumbled blue cheese until smooth and creamy, about 30 seconds.
  5. Transfer mixture to medium bowl and sprinkle bacon over dip; serve.

Dip can be covered with plastic wrap and refrigerated up to 2 days.

Spinach Dip Tip:

Add some color to your spinach appetizer. You can dice some tomatoes, cheese or carrots and sprinkle them on top of your dip to add that professional touch.
