Taleggio Cheese is a semi-soft cheese from Northern Italy in the caves of the Valtaleggio region. It is believed to go Back to the 10th or 11th century. This mountain cheese might be one of the oldest soft cheeses known in Europe.

During production the rind of Taleggio is washed with salt water in the caves to prevent too much mold from forming on the crust. 

It's an aromatic cheese but mild in flavor. The flavor is tangy and meaty with a fruity finish. It has a pudding like texture that melts in your mouth. The softness and pungent aroma of Taleggio are addictive especially when spread on warm fresh bread.

The rind is thin and has an orange-brown color with a stamp indicating it's a true Taleggio. The cheese is washed in a brine to form an orange edible rind. When ripe it has a pungent aroma and should be creamy with a dry rind but there shouldn't be any cracks. The rind does not need to be removed, just lightly cleaned.

Goes nicely with fruit or honey and a wide range of red and white wines. You can also put chunks of Taleggio in a salad. It also makes a great sandwich. Spread some prepared pesto on two slices of fresh bread. Add some slices of cheese and tomato. Now you have a delicious sandwich for lunch or cut it up into small pieces and serve as appetizers.

It has a mild and buttery flavor becoming fuller with age.
