Wrapped Asparagus
Wrapped Asparagus has a wonderful blend of flavors. The corned beef and asparagus appetizer add the festive red and green colors for the Christmas holiday. They make a great appetizer since they are easy to pick up and eat with one hand. Your guests will think you had them created by a gourmet chef.

You can also add extra flavors to the cream cheese, like some chopped chives or olives. Crumbled bacon also adds a nice flavor.

The combinations of different things you can add are limitless. It all depends on what you and your guests like.

Cooking your asparagus by blanching is the best way to keep them crisp. If you just boil them for a long time then they will become too mushy and will droop when your guests try to pick them up.

 

 

Wrapped Asparagus Recipe

Ingredients:

  • 20 – fresh spears of asparagus
  • 10 – slices corned beef, sliced at the deli counter
  • 1 – tub of spreadable cream cheese

 

Preparation:

  1. Prepare Asparagus. (see below)
  2. Blanch Asparagus (see below)
  3. Lay flat a slice of corned beef on a cutting board
  4. Spread with around 1 tsp of cream cheese.
  5. Put two asparagus spears along one side of the meat with the top of the spear sticking out.
  6. Roll up the meat, the cream cheese should hold them together.
  7. Refrigerate until you are ready to serve them.


How to Prepare Asparagus

Depending on the size of the asparagus you have, There will be different ways to get rid of the tough bottom end before cooking.

Small spears just need to have 1/4 cut off the bottom.

The bottoms of large asparagus will need to be peeled with a vegetable peeler or snapped off.

To snap off the tough bottom, hold the asparagus with both hands in the middle and bend the bottom portion until it breaks off. The asparagus will break off at the point where the tender and tough part meet.



How to Blanch Asparagus

Blanching is usually the best way to cook asparagus. Blanching (steaming) will keep help them to stay crisp. Bring a couple of inches of water to boil. Shake in some salt and add the asparagus. Let simmer for 2 - 3 minutes only.

Remove and rinse in cold water until asparagus has cooled down. You can also put them in a bowl of ice water to cool them down.
